{ingredients}
3/4 cup wheat bran
1 cup whole wheat flour
1/2 cup packed brown sugar
2 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 cup crushed pecans
1 cup pure pumpkin
1 egg, lightly beaten
1/2 cup 1% buttermilk
1/4 cup oil
{directions}
In a bowl, combine bran, flour, sugar, cinnamon, baking powder and baking soda, and crushed pecans. In the mixer, combine pumpkin, beaten egg, buttermilk and oil. Mix on low, while gradually adding the flour mixture. Mix just until moist {do not over stir}. Spoon batter into greased muffin tins and bake at 400 degrees for 15 minutes, or until tops are firm to the touch.

I love pumpkin muffins! They're especially good with chocolate chips. ;) And I love how autumn-y these pictures are. Today, I woke up and it was actually cool outside. Gotta love fall weather. :)

your moccasins make me swoon. I mean, really, does it get any better? mine from last year unfortunately broke after traipsing through Paris in them (note to self: they're not the best walking shoes, especially in the rain). getting new ones for this fall is high on my list.

ReplyDeleteI had no idea you had a blog! I was just checking Erica's blog and saw she had yours on her blog list so of course I had to check it out. Your photos are amazing (of course) and I am pleasantly surprised and delighted with your writing. I am going to add you to my blog list, OK? Then I can keep up with your posts. I guess school is starting up soon - here in Nova Scotia they start tomorrow...maybe you have already gone back in Manitoba? Anyway, hope this school year will be a good one for you. Also, I like pumpkin muffins, although I've never made the recipe you posted here. It sounds healthier than my recipe, so I'll have to try it!

I have been wanting something with pumpkin since the first day of spring {spring and summer aren't my seasons, really} and now that it's *finally* almost autumn, my dad won't look at me like I'm crazy anymore and he'll go to the store and buy my pumpkin and bran and cinnamon and nutmeg and oh my goodness I can just imagine what my house would smell like! I need more pumpkin in my life! My brother went to Washington DC last autumn and we made him a pumpkin pie for when he came back, and I made stupidly spicy soup too. But this year, I have a feeling these muffins will become a staple.
